Stillwaters Tavern Brings Its Scratch Kitchen and 20 Taps to Bexley in Land O’ Lakes

The sausage board alone comes with four house-made links and a loaf of Cuban bread from Tampa’s La Segunda Bakery — not what you’d expect to find walking distance from a chain Italian spot in a suburban lifestyle center. Stillwaters Tavern opened in June 2026 at The Hub at Bexley in Land O’ Lakes, its first Pasco County location. The original Stillwaters sits on Beach Drive on the downtown St. Petersburg waterfront; this is the brand’s second restaurant, and the second one Tampa Bay-based 2BHospitality has opened at this specific Bexley center, after BellaBrava (Italian) opened there first.

Owner Thomas Sanborn personally hand-picks the Maker’s Mark barrels behind the bar, which also pours a house-made, barrel-aged “Hogfish” whiskey alongside roughly 20 beers on tap, wine on tap, whiskey flights and a full bar.

The menu runs wider than the sausage board. Starters run $5.99-17.99 — Tavern Buffalo Chicken (15.99), an F.G.T. Stack (13.99), soups (5.99), a house-smoked fish spread (14.99) and crispy pork belly (17.99). The sausages themselves are 7.99 each — smoked beef knockwurst, bacon jalapeño cheddar bratwurst, pork kielbasa and chicken chorizo — or 29.99 for the full board. Salads run 13.99-18.99 (roasted beet, fried chicken salad, a Sponge Dock Greek salad, a vegan Thai salad), and sandwiches run 15.99-22.99 with fries or slaw, including a Nashville hot chicken sandwich, a Tavern Burger, a Cuban, and a cheese steak French dip. Entrees span 14.99-44.99, from fish and chips (22.99) and a Tavern pot roast (27.99) up to a Goliath tomahawk short rib (44.99); sides run a flat 6.99 each.

Two dishes get singled out past the standard menu grid: a birria grilled cheese — sourdough, white American cheese and shredded birria beef, served with the braising jus for dipping — and a chicken Jäger schnitzel with mushroom Jäger sauce, whipped potatoes and a dill cucumber salad. The kitchen serves Cajun-seasoned popcorn instead of bread and butter while you wait on the rest.

The dining room leans into what the restaurant describes as a “down-to-earth Key West” feel — contemporary, with local artists’ work on the walls — a different register than the flashier Italian spot a few doors down.

One honest caveat: this is a brand-new Pasco location for a restaurant that’s been established in St. Petersburg for years, so don’t expect the exact same menu or kitchen team that built the original’s reputation on Beach Drive — this location is still building its own track record.
